Comfy Chicken Stew | Savory Saturday




On this week’s Savory Saturday, I would like to share my very own version of a comfy chicken stew. 


Please excuse me for lack of photos on this post as you know I lost them all, and I am just lucky I have a few stored on my laptop.

This chicken stew is a no brainer, very quick and easy to make and is a regular in my kitchen especially when it’s cold outside. Mind you even when it’s scorching hot back home in the Philippines, we would still be eating this. This dish definitely reminds me of home.

If you want to recreate this, all you will need are the following ingredients:

Chicken thighs, chopped in bite sized cubes
Chopped onion
2 cloves of garlic
Red bell peppers
Diced potatoes
Diced carrots,
Green peas
1 tablespoon Turmeric powder
1 tablespoon curry powder
Chicken stock
Fish sauce
Milk

First, all I did was sweat the onions and garlic in a pan, remove from the pan when they get translucent and set aside. Then I sautéed the chicken until it is half cooked and added turmeric, curry powder and fish sauce. The fish sauce amount will be depending on you. Later, I added the onions back, added the potatoes, carrots, and red bell pepper. I added chicken stock in to the pan just until everything is covered. I covered the pan and let it simmer until cooked. When it is almost ready, I added milk and green peas, and season with salt and pepper to taste. Let it simmer for a few more minutes until done. Serve with hot rice.

  3. This looks tasty, my comfort food tends to be chocolate haha, but I do love sitting around the table on special occasions with family/relatives for a roast! :)
